plant-based/vegan 'unbeef' πŸ– stew and dumplings! πŸ₯Ÿ

there's nothing better folks, as we begin to switch from the autumn season πŸ‚ into winter ❄️, the need for good, warming plant-based vegan comfort food...🍲

as an autumn baby myself, my favorite pastime is curling up under a blanket on the couch with my favorite show, movie or book or simply watching the leaves fall, especially after enjoying this easy to prepare plant-based, vegan one-pot meal!

'unbeef' πŸ– stew and dumplings!

prepare your soy chunk protein as directed.

season with organic sea salt, black pepper, garlic salt, onion powder and all purpose seasoning if you have it on hand and set to one side to 'sit' as you prepare the rest of your ingredients.

cut up small one onion πŸ§…, fresh garlic (if you have it on hand) and prepare your vegetable/s of choice (I used green beans as that was all I had on hand along with some left over tomatoes hiding out in my fridge and lima beans 🫘!).

slowly heat some avocado πŸ₯‘ oil in a deep pan/pot before adding your chopped onions and fresh garlic into the pan, stirring gently.

take your SEASONED 'unbeef' soy protein adding it to the pan, stirring it into the onions and garlic mixture.

once your 'unbeef' and ingredients begin gently cooking add your vegetables and one cup of water, bringing it to a gentle boil, before reducing the heat to low.

cover your pan/pot to let simmer while you prepare your dumplings!

if you are using a pre mix (dumpling/ biscuit mix), prepare as directed.

*if you are preparing your own dumplings, as I did, combine two cups of flour, salt, and two teaspoons of baking powder together, before adding water and mixing together, until it becomes a loose and sticky dough.

once you have prepared your dumplings, remove the lid from your pan/pot and begin to place them into your stew and then cover once more to cook, until finished (around another 30 minutes or so, on a slow simmer).

continue to season to taste.

once the dumplings are added your stew will begin to thicken, so add water or even some belsoy plant-based cream or plant-based milk to your stew for added richness and flavor until you reach your desired consistency!

once prepared, remove from heat and let sit before serving and then sit back and...

...enjoy! πŸŒΏπŸ’š
